Design a HACCP‐friendly kitchen. HACCP is the industry term for threat research and critical control points. Note all points of potential hazards from the point of receiving of food on the loading dock, to the pantry and much cooler, to the line where in fact the food is prepared.
Consider any place where contamination or unsafe conditions may are present to cause health hazards from the food being offered. Design the kitchen to avoid places where food is at the incorrect heat or in danger for cross‐contamination. Make the launching dock access as near the walk‐in cooler as you can, for example, and design a clear way to other storage areas to avoid the food from coming into contact with anything unnecessarily.
