Consider any place where contamination or unsafe conditions may can be found to cause health hazards associated with the food being served. Design the kitchen to avoid places where food is at the incorrect temperatures or in danger for cross‐contamination. Make the launching dock entrance as near to the walk‐in cooler as possible, for example, and design a specific path to other storage space areas to avoid the food from getting into contact with anything unnecessarily.
One traditional guideline of kitchen design places the stove, kitchen sink and refrigerator in a triangular creation to reduce unneeded activity and keep the mostly used spaces within easy reach. The relative attributes of the imaginary triangle don't need to be the same length, but keep them between four and nine ft long for maximum efficiency. The stove, refrigerator and kitchen sink may all be on different wall surfaces, or the stove might be on one wall while the kitchen sink and the refrigerator talk about a wall, with the dishwasher in between often.
